Best-Ever Homemade Soft & Fluffy Cinnamon Rolls

ROUND ONE: 40 MINUTES PREP TIME & 60 MINUTES TO RISE
  1. Melt 6 tablespoons of butter.
  2. Take out ⅓ cup buttermilk and ½ cup whole milk from the refrigerator and bring to room temperature.
  3. Beat 2 eggs and bring to room temperature.
  4. Sift 4 cups all-purpose flour.
  5. Grease a large bowl.
  6. In a small bowl mix
    • ⅓ cup hot water
    • ¼ teaspoon sugar
    • a package of yeast.
  7. Let mixture sit for a few minutes until it is  foamy.
  8. Pour yeast mixture into a large bowl.
  9. To the bowl add:
    • ½ cup sugar
    • ⅓ cup buttermilk
    • ½ cup whole milk
    • 6 tablespoons melted butter
    • 2 tablespoons vegetable oil
    • 1 tablespoon vanilla extract
    • 2 beaten eggs
  10. Mix until combined.
  11. Mix in;
    • 1 teaspoon salt
    • 1 teaspoon baking powder
  12. Gradually mix in 4 cups all-purpose sifted flour a little at a time.
  13. Once dough has formed place the ball of dough into a large, lightly greased bowl.
  14. Cover with plastic wrap and place the bowl in a warm location.
  15. Let sit for about 1 hour or until the dough has doubled in size.

ROUND TWO: 20 MINUTES PREP TIME & 60 MINUTES TO RISE

  1. Melt ½ cup butter and add a dash of vanilla extract.
  2. Gently punch the dough to release the air.
  3. Sprinkle your work surface with flour.
  4. Roll the dough ball into a small rectangle
  5. The roll it out to a large rectangle that is about ¼ inch thick
  6. Brush the dough with half of the melted butter/vanilla extract (¼ cup)
  7. In a small bowl mix together:
    • 1⅓ cup brown sugar.
    • 2 tablespoons cinnamon.
  8. Sprinkle on half the brown sugar & cinnamon mixture.
  9. Brush with (¼ cup) remaining butter
  10. Add remaining brown sugar mixture.
  11. Starting from the end furthest from you, begin tightly rolling up the dough.
  12. When done, place the roll seam-side down, and carefully slice the roll into 14 (1½-inch) sections.
  13. Place the rolls in a greased baking pan,sides touching.
  14. Cover with plastic wrap and place in a warm location to let rise.

ROUND THREE: 10 MINUTES PREP TIME & 20 MINUTES BAKE TIME

  1. Preheat oven to 350 F.
  2. Bake for 20 minutes or until sides of cinnamon rolls are lightly golden.
  3. Place foil on to of rolls 10 minutes in to keep the tops from browning too much.
  4. Remove from oven and let cool while you make the icing.
  5. In a medium bowl combine:
    • 5 ounces cream cheese
    • ¼ cup melted butter
    • 4 tablespoons milk
    • 1½ cups powdered sugar
    • ½ teaspoon vanilla extract
    • pinch of salt
  6. Mix until smooth.
  7. Add the icing.
  8. Serve immediately.
